Sunchoke (Jersualem artichoke aka Sunroot, wild sunflower, or earth apple) have the appearance of ginger root but have a sweet, nutty flavor, slightly like that of water chestnuts. A very versatile food that can be used both raw and cooked and make a delicious soup. Or wonderful in making into chips​/​fries (our FAV). HISTORY: The sunchoke is native to North America. The French explorer Samuel de Champlain introduced them to Europe after coming across them at Cape Cod in 1605. BIOLOGY: The sunchoke plant (Helianthus tuberosus) is related to the sunflower and produces edible tubers. It is hardy and grows readily in cold climates. NUTRITION: Jerusalem Artichokes are very high in inulin, a carbohydrate linked with super intestinal health due to its prebiotic (bacteria promoting) properties. One cup of Jerusalem artichoke (150g) provides 110 calories, 3g of protein, and 26.1g of carbohydrates! PLANTING: get a jump for 2025 season. Fall planting is a great time to plant :-) Plant this in an area where you want it to multiply! I mean seriously... they will take off!
